In a frying pan, heat up the oil, brown the onion, and add then the leek, the red pepper and the green pepper, the garlic and parsley.
Stir and mix well. Next add the round courgettes, the carrots, salt, pepper, nutmeg and the broth.
When the courgettes are ready, remove and let drain. Season, then add grated bread and grated cheese. Allow to cool off.
